Celest and I have been making this recipe for over 10 years, and it never fails to please. We are having it tonight because it is too hot outside to grill, and this is done indoors.

Easy recipe tha doesn’t take too long and tastes great.

When you combine Celeste’s ranchero sauce with the stuffed poblano shown below, Mexican rice, and fresh avocado, you have my favorite Mexican meal

These are a good alternative to fried corn taquitos. They aren’t as crispy as fried taquitos, but they are a good alternative.

This is a really good cake, but a little tough to make. Celeste was stuck inside with the hot weather and spent an afternoon making it.

When the weather is nice, Celeste and I grill about 3 to 4 times per week. For the last 2 weeks and the next 2 weeks the heat index will be between 105F and 110F. We will not be grilling.
