Casey Chili

My family calls this recipe a chili, but it is not like any chili a self respecting Texan would claim. This is a casserole that has been a Casey family favorite for years. Celeste has modified it slightly. She has:

Added edamame in place of 1/2 of the lima beans

Added penne pasta in place of elbow macaroni

Added black beans in place of red kidney beans

All of these changes make the casserole slightly firmer.

This is an easy recipe, tastes great, and makes great leftovers. If you don’t have people picking the sausages out of the pot while it finishes cooking, you did something wrong. I can still remember my mother whacking my uncle Bill with a wooden spoon for stealing the sausages every time she made the recipe

Don’t let them eat all of the sausages before you serve.
