
12 oz Medjool dates (pitted)
1/4C Creamy peanut butter
2 oz Milk chocolate, dipping chocolate
2T Dry roasted peanuts (finely chopped)
Flaky sea salt
Process
Line a small, rimmed baking sheet with parchment paper, and set aside
Cut a slit down the length of each date
Remove the pit if there is a pit
Spoon or pipe about 1t of creamy peanut butter into the cavity of each date and arrange on the prepared baking sheet and set aside
Melt the chocolate in a medium sized microwave safe bowl
Spoon the chocolate over the dates (it doesn’t need to cover the dates completely)
Immediately sprinkle with the chopped peanuts and flaky salt
Refrigerate on a parchment lined baking sheet until solid
Transfer to an airtight container or freezer bag and freeze for up to 1 month
Thaw in the refrigerator before serving
