Green Pepper Casserole (Texas Hash)

Green pepper casserole

Ingredients

2T                 Butter

1C                 Uncooked long grain white rice

2C                 Chicken stock

1ea               Green bell pepper seeded and chopped

1lb                 Turkey

1/2lb              Ground beef

1ea               Medium sized onion chopped

2 stalks         Celery thinly sliced

2 cloves        Garlic mashed and minced

1t                  Dried oregano

1t                  Salt

1/4t               Pepper

1t                  Sugar

15oz              Can of tomato sauce

6oz                Can of tomato paste

1-1/2C Shredded Velveeta cheese

Process

Heat the butter in a frying pan

Add the rice stirring gently until lightly toasted

Spoon the rice into a greased 9 x 13 baking pan

Heat the chicken stock and pour over the rice

Arrange the green pepper slices on the rice

Cover tightly with foil and place into a 375F oven for 20 minutes

Using the same frying pan brown the ground beef and turkey

Add the onion, celery, garlic, oregano, salt, and pepper and continue cooking for another 5 minutes

Stir in the tomato sauce, and paste

Remove the casserole from the oven and spoon the mixture over the peppers

Cover and bake at 375F for 15-25 minutes

Remove the cover, sprinkle with cheese, and bake uncovered for another 5 minutes to melt the cheese

Cool and serve
