
Ingredients
1lb Unsalted butter
2C Sugar
6 Eggs
4C Flour
1qt Pecans
2oz Lemon extract
1t Baking powder
1C Candied pineapple 8oz jar chopped
2C Candied cherries red and green, chopped
1/2t Vanilla
Process
Cream butter and sugar together
Add eggs, one at a time
Sift baking powder in with first cup of flour
Sift a little of the flour over the fruit to keep it from sticking
Add remaining ingredients and mix
Separate into 3 Pyrex loaf pans lined with aluminum foil
Bake in 325F oven for 1hr 15min or until a toothpick comes out clean, this could take another 20 minutes
