Gramma Alice’s White Fruit Cake Single Loaf Version

Ingredients

12T      Unsalted butter

2/3C + 1T      Sugar

2         Eggs

1-1/3C Flour

1C Chopped Pecans

1T+1t Lemon extract

1/3t Baking powder

1/3C      Candied pineapple, chopped

3/4C      Candied cherries green and red chopped

Dash     Vanilla

Process

Cream butter and sugar together

Add eggs, one at a time

Sift baking powder in with first cup of flour

Sift a little of the flour over the fruit to keep it from sticking

Add remaining ingredients and mix

Separate into 3 Pyrex loaf pans lined with aluminum foil

Bake in 325F oven for 1hr 15min or until a toothpick comes out clean (this could be another 20 minutes}

Be sure to allow to cool or the cake will crumble when you cut it
