Gazpacho (Mike’s Version)

Serves 3

Ingredients

3         Medium tomatoes

1C        Large cucumber

1C       Medium sized onion

1C       Medium sized green pepper

½        Can pimiento

1/4C   Sweet Marsala

1C      Clamato (V8 is an ok substitute, but not as good)

2T       Olive oil

3T       Red wine vinegar

Dash  Tabasco

1 oz Vodka (optional)

2T       Cilantro

1/4C   Croutons

Process

Peel the tomatoes, cucumber, and onion

Seed the green pepper

Chop the tomatoes, cucumber, onion, and green pepper

Put ½ the ingredients into a food processor or blender and puree

Add Clamato, olive oil, vinegar, Tabasco, salt, and pepper

Refrigerate for 2hrs or more

Just before serving combine the chopped vegetables, and the puree.

Add the chopped cilantro and croutons and serve
