Ingredients
3lb Baby potatoes (red, yellow, or mixed)

Olive oil
Coarse salt
Process
Boil the potatoes for 12 minutes, or until a paring knife pierces easily
Drain
Place in a large bowl
Toss with about 2T of olive oil until the mixture glistens
Add about 1T coarse salt
Toss again to mix well
Put in a ziplock bag
Does not need to be refrigerated
