
Ingredients
1T Butter
1 Medium yellow onion diced
3C Water
2C Chicken stock
1 Bay leaf
2 Sprigs lemon zest
3 Fresh oregano sprigs
2 Fresh parsley sprigs
15oz Diced tomatoes
1/2C Carrots ½ in chunks
1C Potato
1/2C Celery
1/2t Salt
Black pepper
1/2C Corn
1/4C Peas
8oz Cooked Chicken (1/2 breast) OPTIONAL!
Process
Sauté the butter and onion 3-4 minutes.
Add chicken broth and water.
Tie lemon zest, oregano, and parsley together and add to pot.
Add the tomatoes, carrots, potatoes, celery, salt, and pepper.
Bring to a simmer over medium heat.
Reduce to low,
Cover and cook 20 minutes.
Add corn, peas, and chicken
Simmer covered for another 15 minutes.
Remove herb bundle.
Season to taste.
