Tuna Crepes

Crepes

Ingredients

1/2C              Flour

3/4t Salt

2                   Eggs beaten

1T                 Butter, melted

3/4C              Milk

Stir flour and salt together

Add eggs, butter, and milk and beat until smooth

Allow batter to stand at room temperature for 1 hour

Filling

1can              Tuna drained

1T                 Pickle relish

1                   Frozen peas, thawed

1/2T              Parsley

1C                 Milk

1/8C              Flour

1/4t               Salt

1/4t               Dry mustard

1/8t               Pepper

1/8C              Butter

1/2C              Shredded Parmesan

1/4C Shredded Swiss

Mix tuna, pickle relish, egg, and parsley

Make white sauce with milk, flour, salt, mustard, pepper, and butter

Boil 1 minute over medium heat

Stir in cheese

Add 1/4C sauce to tuna mixture

Spread 2T of tuna and egg mixture on each crepe

Pour remainder of sauce over all

Bake for 10minutes @400F
