Tuna Casserole

Ingredients

Bechamel

1C      Whole milk

1C      Heavy cream

1/4C   Cubed swiss cheese

3T      Butter

2T      AP Flour

Pinch  Salt, pepper, nutmeg, and paprika

Casserole

1C      Mushrooms

1T      Marsala

Salt and pepper to taste

1T      Butter

1T      Olive oil        

12oz   Tuna albacore in water

2C      Wide egg noodles

3/4C   Frozen green peas

1/2C   Celery chopped

1/2C   Onion chopped

1/2C   Parmesan

Process

Cook pasta al dente, drain

Sauté the mushrooms in butter, and olive oil

Mix everything except the noodles, mushrooms, and Parmesan in a greased 9 x 13 casserole

Add pasta and fold in

Make the bechamel

           Melt butter in a pan and stir in flour and seasoning

           Add milk/cream and stir until thickened

           Add cheese off heat

           Pour over the casserole and stir

Top  with Parmesan and mushrooms

Bake for 30 minutes at 400F
