
Ingredients
1/2lb Unsalted butter
1-1/2C Confectioner’s sugar
1ea Large egg
1t Vanilla
2-1/2C AP flour
1t Baking soda
1t Cream of tartar
1/4t Salt
Red and Green food coloring
Process
In a large bowl of an electric mixer at medium speed, cream the butter, confectioners’ sugar, and vanilla
Add and mix at low speed the flour, baking soda, cream of tartar, and salt, until well combined
Whisk and set aside a large egg
Place 1/3 of the dough in a small bowl, and tint it red by kneading with a spatula a few drops at a time of red food coloring until you have the desired color
Repeat the process with a second 1/3 of the dough, but with green food coloring
Don’t skimp on the food coloring. Expect to use about 1t of each color.
Leave the remaining 1/3 of the dough uncolored
Chill the dough for 30 minutes
On a lightly floured board, roll out each color of the dough to rectangles of equal size 1/4in thick
Lightly brush the red dough with the beaten egg, being careful to leave no puddles
Stack the green layer directly on top of the red layer, pressing lightly to adhere.
Brush the green layer with the beaten egg
Stack the white layer on top, pressing lightly to adhere.
Roll the stack lengthwise into a tight log
Wrap in plastic wrap and chill for 8 hours or overnight
Preheat the oven to 350F
Butter two cookie sheets
Cut the log into 1/4in slices and place 1 inch apart on the cookie sheets
Bake 8 – 10 minutes, or until lightly colored
Let cool on the sheets for 5 minutes
Transfer to a wire rack to finish cooling
