Tomato Jam

Ingredients

1lb                 Tomatoes, freshly chopped

3/4C              Sugar

1-1/2T           Lime juice

1t                  Ginger, freshly grated

Pinch            Ground cinnamon

Pinch            Ground cloves

Pinch            Salt

Pinch            Red chili flakes

1t                  Butter

Process

Combine all of the ingredients in a large pot

Bring to a boil

Reduce to simmer

Stirring regularly until you reach a thick, jammy, consistency (about 1 to 1-1/2 hours)

Remove from the heat and fill jars leaving 1/4 inch of head space

Wipe and apply lids

Place in a stock pot with boiling water for 20 minutes

Remove from the water bath and allow to cool

Test the results

Store in a cool, dry place for up to 1 year
