General Tso’s Chicken Stir Fry

Ingredients for the sauce

1/4C              Hoisin sauce

1T                 Soy sauce

1T                 Rice vinegar

1T                 Sugar

1/2T              Chili garlic sauce

1/2T              Vegetable oil

Process for the sauce     

Mix all of the ingredients and set aside

Ingredients

1/2LB            Boneless dark meat chicken

2t                  Vegetable oil

1T                 Minced garlic

1T                 Minced ginger

1/2C              Sweet yellow peppers

1/2C              Sweet red pepper

1/2C              Celery (sliced on the diagonal)

1/2C              Carrots (Sliced on the diagonal)                    

1/2C              Onion (Sliced on the diagonal)

1/2C              Snow peas (Sliced on the diagonal)      

1t                  Red pepper flakes

1-1/2t            Cornstarch mixed with 1T water

Process for the meal

In a hot wok add 2t oil

Add chicken and cook until no longer pink

Remove to a plate

Add 2t oil, 1T minced garlic, and 1T minced ginger

Add the vegetables

Stir fry until tender

Add the chicken and combine

Add 1/2C of sauce, and chili flakes

Stir to combine

Add 1-1/2t of cornstarch mixed with 1T water and stir until thickened

Drizzle with sesame oil

Toss and serve with steamed rice
