Ingredients
1/4C Lemon juice
2C Water
2lbs Apples (Firm apples like Granny Smith)
2C Cinnamon Red Hots (Cinnamon Imperials)
1C Water
1T Whole cloves
2 sticks Cinnamon
1 Guijillo chile
Instructions
Add the lemon juice to 2C water
Peel and core the apples
Slice into 1/2-inch-thick rings
Drop the apple rings into the lemon water mixture as you prepare them
Heat 1/2C of the remaining water and cinnamon candies in a saucepan
Stir often until the candy is melted, adding water as needed to keep the syrup from getting to thick and burning
Add the guajillo chile, whole cloves, and cinnamon sticks
Drain the apple rings and pat dry
Gently stir the apple rings into the syrup
Cover and simmer, stirring gently occasionally until the apples are tender (about 10+ minutes)
Add the rings to a glass container and cover with syrup
Cover tightly and refrigerate overnight
Remove the cloves and cinnamon sticks before serving
Store in the refrigerator for two to three weeks
