Smashed Parmesan Potatoes

Ingredients

1/2lb                   Yellow baby potatoes

1/2lb                   Red baby potatoes

Kosher salt and freshly ground black pepper

3T                          Good olive oil

1/2C                    Freshly grated Parmesan cheese

2T                          Minced fresh chives

Sea salt

Process

Preheat oven to 400F

Place the potatoes and 1T of salt in a large saucepan and add enough water to cover the potatoes.

Bring to a boil

Reduce the heat and simmer for 17 to 20 minutes until the potatoes are tender when pierced with a fork

Drain the potatoes and place them on a sheet pan

With the bottom of a glass press each potato until it is about 1/2inch thick (they will be messy)

Sprinkle the potatoes with the 3T olive oil, 1T of salt, and 3/4t of black pepper

Roast the potatoes for 25 to 30 minutes, turning once, until the skins have become nicely browned

Sprinkle the potatoes with 1/2C of Parmesan cheese

Roast for another 2 to 3 minutes, until the cheese just melts

Sprinkle the potatoes with chives and sea salt

Serve hot
