
Ingredients
1/2lb Shrimp
Salt to taste
Pepper to taste
3.5T Butter
1/4C Marsala
2 Egg yolks
1/2C Heavy cream
Lemon To garnish
Parsley To garnish
Cayenne To garnish
2C Egg noodles (Wide Dry)
Directions
Season shrimp with salt, and pepper
Toss in butter in frying pan on medium heat until well coated
Add Marsala stir shrimp briefly.
Move the shrimp to one side of the pan.
Boil the Marsala rapidly to reduce, while keeping the shrimp half of the pan off the heat
When Marsala is almost boiled away, move the shrimp back to the mixture
Remove from the heat
Add yolks and cream, stirring all the time
When all is added, return to gentle heat. Do Not Boil
When thickened, spoon shrimp and sauce onto egg noodles Garnish with parsley and cayenne
