Seared Scallops with Mashed Potatoes and Wine Sauce

Ingredients

6ea                Large scallops per 2 servings

1T                 Shallots

1/3C              White wine

1T                 Heavy cream 1T

Salt and Pepper to taste

Ingredients for Mashed Potatoes and Green Beans

3ea Russet Potatoes

1/2 Stick of butter

1/4C Heavy cream

1/2LB Green Beans

Process

Peel the mashed potatoes,

Cover with water in a pot.

Boil until fork tender.

Mash with butter, cream, and salt to taste.

Cook the green beans in the Instant pot for 2 minutes on High Pressure and serve as a side

Heat a sauté pan

Coat the pan with vegetable oil spray or pam

Sauté the scallops

Set aside

Add the shallots to the pan and sauté.

Add white wine and cream

Serve the scallops over the mashed potatoes and cover with the sauce

Garnish with fresh tarragon
