Scallops with White Wine Sauce

Ingredients

6ea               Large scallops per 2 servings

1T                 Shallots

1/3C              White wine

1T                 Heavy cream 1T

Salt and Pepper to taste

Process

Sauté the scallops in pam or cooking oil

Set aside

Add the shallots to the pan and sauté.

Add white wine and cream

Serve the shallots over mashed potatoes and cover with the sauce

Garnish with fresh tarragon
