Roti Chicken

Ingredients

1 or 2 Small  Chickens (about 4-1/2lbs each)

2 Sprigs     Rosemary per chicken

1ea Lemon (sliced)  per chicken           

Salt and Pepper           

Olive oil                         

Process

Rinse the chicken

Remove the giblets if any

Salt and pepper the inside of the chicken

Add the sliced lemon to the inside of the chicken

Add the rosemary to the inside of the chicken

Rub the outside of the chicken with olive oil

Salt and pepper the outside of the chicken

Put the chicken or chickens on the spit

Roti the chicken in a 350 to 400F covered charcoal grill

Optional to add a chunk of pecan for a lighter smoke

 Put a drip pan in the middle of charcoal to reduce flare ups

Cook to an Internal temperature of 160-165F in the thigh and 175F in breast (1-1/2 to 2 hours)
