Roasted Root Vegetables

1C                 Red Onion in chunks

 2C                Squash, winter, butternut, raw, cubed

2T                 Olive Oil, Extra Virgin

1C                 Parsnips, raw sliced

1C                 Carrots, raw

1                   Potato large flesh and skin, cubes

1                   Sweet Potato

Put olive oil in a rimmed baking sheet at 425F

Distribute the vegetables in a single layer and cook for 45 minutes.

You may need to turn the vegetables once or twice.
