
Ingredients
2C Heavy cream
1/8C Onions chopped
2ea Garlic cloves, crushed
1ea Sprig of fresh thyme
1/4C Dry white wine
1ea Bay leaf
1T Extra virgin olive oil
Kosher salt and cracked black pepper to taste
Process
In a heavy bottomed pan heat the olive oil on medium heat
Once the oil begins to shimmer add the onion, crushed garlic, thyme, and bay leaf
Sauté until the onions are translucent. Do not allow the onions or garlic to brown
Turn the heat up to medium high and add the wine
Reduce the mixture until almost dry
Add the heavy cream, salt, and pepper
Bring to a low simmer
Stir frequently and reduce the cream for about 5 minutes
Set aside and keep warm until use
