
Ingredients
1lb+ Pork tenderloin
Yellow mustard
Flour
Salt
Pepper
Process
Remove the silver skin and any fat from the tenderloin
Preheat oven to 450°F.
Coat with mustard until well covered
Salt and pepper
Sift a thin layer of flour over the entire loin
Place in an open skillet
Transfer skillet to the oven
Cook pork until an instant-read thermometer inserted in thickest part registers 135°F, Check at 10–15 minutes.
When the pork reaches 135F transfer to a cutting board and let rest at least 5 minutes before slicing
