
Ingredients
Pork
1lb Pork tenderloin
1ea Sprig of fresh rosemary
Vegetables
1ea Onion
1ea Green bell pepper
1ea Red bell pepper
10ea Mushroom caps
1/2C Italian dressing
Marinade
1/8C Olive oil
1T Soy sauce
1T Honey
1T Dijon mustard
1/2T Light brown sugar
1/2T Lemon juice
1/2t Worcestershire sauce
1 clove Minced garlic
1/2T Chopped parsley
1/4t Garlic powder
1/4t Salt
Ground black pepper to taste
Process
Combine the ingredients for the marinade in a small bowl and whisk well
Cut the pork into 1-1/2in cubes
Place the pork tenderloin and rosemary in a freezer bag
Pour the marinade on top
Marinate in the refrigerator for at least 12hr and up to 3 days
Remove the pork tenderloin from the bag
Discard the marinade, rosemary, and bag
Assemble the pork on shish ka bob skewers
Cut the vegetables into pieces large enough to skewer
Coat the vegetables with Italian dressing
Assemble the vegetables on shish ka bob skewers
Grill over high heat until the pork is caramelized on two sides and the vegetables are caramelized on the edges
