Ingredients
2ea Pork chops Brined for 24-36 hours.
Pat dry with paper towels
Salt and pepper
1-1/2C Frozen lima beans
1-1/2C Onion thinly sliced
10-1/2oz Can Golden Mushroom Soup
1/2C Milk
2t Butter
2t Oil
Brine
1-1/2T Kosher salt
1-1/2T Sugar
2t Capers
2t Black peppercorns
2 small Bay leaves
1C Water
Combine and bring to a boil
Stir to dissolve the sugar and salt
Cool completely before using
Process for pork chops and lima beans
Sprinkle chops on both sides with salt, pepper, and 1/2t sugar
Brown chops on both sides in oil and butter in a skillet (2 minutes on each side)
Bake @425F for 5-10 minutes (140F internal temperature)
Rest 5 minutes
In a separate pot combine soup and milk
Add onions and lima beans
Cook over Med Lo for about 45 minutes to reduce to gravy
Serves 2
If you want to serve 4 double the pork chops but not the gravy
Serve with mashed potatoes or rice
