Pink Confection

This recipe comes from Great Grandma Agnes Casey.  It has been a family favorite for over 70 years.

Ingredients             

1/2lb              Peppermint rounds

1C                 Half and half

1-1/2C           Heavy cream

1pkg              Knox unflavored gelatin

Box               Nabisco “Famous Chocolate Wafers”

Process

Melt candy in cream over low heat

Mix gelatin in 2T water

Add spoonsful of peppermint to gelatin until 1/2C.

Pour into remaining mixture and stir well

Let cool

Whip 1-1/2C whipping cream and fold into cooled mixture

Starting with cookies make layers in pan

Cool overnight in refrigerator
