Blue Ribbon Pineapple Upside Down Cake

INGREDIENTS

Topping

1 Can   Sliced  pineapple rings

Bunch  Maraschino cherries  (one for middle of each pineapple ring)

3T         Butter

3/4C     Brown sugar

3T         Dark rum

Melt butter in a 10”pan.

Add brown sugar

Arrange drained pineapple and cherries

Cake

3           Eggs

1/2C     Sugar

6oz       Softened butter

2t          Vanilla

1 1/2C  Flour

2t          Baking powder            

1t          Salt

2T         Dark rum

1T         Lime zest

Beat eggs 5 minutes

Add rest of ingredients

Pour batter into pan with pineapples

Bake at 350F for 45 minutes

Immediately invert on serving plate

Allow pan to remain for a few minutes so topping will frost cake
