
Ingredients
5oz Cream cheese
1/2C Shredded extra sharp cheddar
1/2C Shredded pepper Jack
3T Mayonnaise
1/3C Sliced pimentos drained and pressed
3T Sliced scallions
Salt, pepper, cayenne to taste
1/2C Chopped toasted pecans
Process
Combine everything except the pecans, salt, pepper, and cayenne in a bowl.
Mix on medium speed
Transfer ½ of mixture to a food processor and puree until nearly smooth
Stir back into the mixture in the bowl until combined
Season with salt, pepper, and cayenne
Chill mixture for 1 hour to firm
Form into a ball and wrap in plastic
Refrigerate 4 hours or overnight
Roll cheese ball in pecan topping and serve
