Peanut Butter Chocolate Chunk Cookies

Ingredients:

1/2lb              Butter

1 1/2C           Light brown sugar (packed)

3/4C              Granulated sugar  

2                    Large eggs   

1C                 Smooth peanut butter

2t                   Vanilla extract

2 1/2C All purpose flour

1lb                 Semisweet chocolate chunks

1t                   Baking powder

1t                   Salt

Directions:

Preheat the oven to 350F

In the bowl of an electric mixer cream the butter and sugars until light and fluffy

Add the eggs one at a time

Add the vanilla extract and peanut butter and mix

Mix the flour, baking powder, and salt

Add to the batter, mixing only until combined.

Fold in the chocolate chunks

Drop the dough on a baking sheet lined with parchment paper using a 1-3/4in ice cream scoop or a rounded table spoon

Dampen your hands and flatten the dough lightly

Press the tines of a fork into the dough in both directions

Bake for exactly 17 minutes

The cookies will seem underdone

DO NOT OVERBAKE

Remove from the oven and let cool slightly on the pan

Transfer to a wire rack and let cool completely
