Peach Salsa

Ingredients

2C                 Diced peaches

1-1/4C           Minced red onion

2t                  Minced jalapeno without ribs or seeds

1/3C              Chopped cilantro

                     Juice of one lime or more to taste

                     Salt to taste

Process

Place all of the ingredients in a bowl

Stir to combine

Cover the bowl and refrigerate for at least 30 minutes (up to 24hrs)

Serve with chips or a condiment for chicken or fish
