Peach cobbler

Ingredients

2/3C              Sugar

1T                 Cornstarch

1C                 Boiling water

3C                 Peaches, peeled, pitted, and sliced (with juice)

3T                 Butter

Dash             Cinnamon

Shortcake dough

2C                 Flour

3t                  Baking powder

3/4t               Salt

3-5T              Sugar

1t                  Lemon zest

1                   Egg

3T                 Butter

4T                 Shortening

1/2C              Milk

Directions

Mix 2/3C sugar, 1T cornstarch in a saucepan

Gradually stir in 1C boiling water

Bring to a boil for 1minute

Stirring gradually, add 3C fruit and juice

Pour into 9 x 13 Pyrex dish

Dot with butter

Sprinkle with cinnamon

Make shortcake dough

Mix dry ingredients

Cut the butter and shortening

Mix wet ingredients

Combine all ingredients

Drop shortcake dough onto fruit a tablespoon at a time until completely covered

Bake at 400F for 30minutes
