Ingredients
2C King Arthur Pizza/Pasta flour
2ea Eggs, slightly beaten
1t Olive oil
3/4t Salt
2-4T Warm water
Process
Mound the flour in a large bowl or on a cutting board
Make a well in the center and add the eggs, olive oil, salt, and 2T of water (we may or may not add the rest of the water later)
Using a fork, combine all of the ingredients until the dough can be formed into a ball
If the mixture is too dry to hold together, gradually add more water
Cut the pasta ball into thirds so you don’t have to handle all at once
Flatten the pasta to about 1/2in thick with your hands on a surface that is dusted with flour
In a pasta machine {I use the Kitchenaid attachment|}
Set the pasta machine at 1
Take one of your 3 pasta balls
Fold one third from one end and then one third from the other end to form a ball 3 layers thick
Feed through the machine. If the pasta is too sticky, dust with flour. If it is too thick to go through the machine flatten it a little bit with your hands and try again
Feed through the machine one more time
Switch the setting to 2 and feed through the machine
Switch to 3 and feed through again
Switch to 4 for the final pass
Lay the sheet out on a floured surface while you repeat this process with the other pieces of dough
Roll out to setting 4 on the pasta machine (I use a Kitchenaid with attachment)
Cut the pasta into sheets the size that you want to fit your pan
Let the pasta dry for at least one hour
