Ingredients
2lbs Ripe papaya
3/8C Red onion, very thinly sliced
2T Coarsely chopped fresh cilantro
2T Fresh lime juice
1T Extra-virgin olive oil
1t Freshly grated ginger
1/2t Minced fresh habanero chile
Dash Ground allspice (optional)
1/4t Kosher salt
Cut the papaya into 3/4-inch chunks and put in a large bowl.
Add the remaining ingredients and toss to combine.
Let sit for 10 minutes at room temperature to meld the flavors, and serve.
