
2 Skinless salmon fillets (6oz each)
2T Cajun seasoning
1/2t Brown sugar
Pinch Salt
1T Vegetable oil
2T Orange marmalade
1-1/2t Lime juice
Lime wedges
Combine the cajun seasoning, brown sugar, and salt
Rub on both sides of both fillets
Saute fillets in oil in a nonstick pan over medium high heat for 3-4 minutes
Flip and cook other side for 2-3 minutes
Whisk together marmalade and lime juice
Stir into skillet until the marmalade melts
Carefully flip the fillets until coated with glaze on all sides
Continue to cook fillets until they flake easily with a fork
Serve with lime wedges
