Mussels

Ingredients

2lbs               Mussels (Discard any that are not closed)

1/2C              Chopped onion (Chopped fine)

2T                 Minced shallots

1T                 Unsalted butter

2                   Bay leaves

6 Sprigs       Coarsely chopped parsley

1/4t               Black pepper

1-1/2C              Dry vermouth

Put all of the ingredients less 1/2 of the parsley into a pan

Bring to a boil

Cover and cook for 2 minutes

Lift the cover and see if the mussels are all open

Discard any mussels that won’t open

If not, cover and cook for another minute or so

Discard any mussels that don’t open

Add the remaining parsley and serve immediately
