Ravioli w/Mushroom &Spinach Sauce

4 servings        375 calories per serving     30 minutes

Ingredients

5oz              Ravioli (cheese filled, or favorite ravioli)

2T                 Olive oil

1/4C              Sun dried tomatoes (chopped)

10oz              Mushrooms

5oz                Fresh spinach

4cloves         Garlic (minced)

1/4t               Red pepper flakes

1T                 Olive oil

                     Salt and pepper to taste

Process

Cook ravioli until al dente(about 10 minutes), and drain

In a large skillet heat 2T of olive oil on medium heat

Add chopped sun-dried tomatoes and sliced mushrooms

Cook for 2 minutes while stirring

Add fresh spinach, minced garlic, and red pepper flakes

Continue cooking and stirring until the spinach wilts

Add the cooked ravioli and 1T of olive oil

Stir

Reheat gently on medium low heat

Season with salt and pepper to taste

Serve
