Mexican Shrimp Cocktail

Ingredients

1/3C              Red onion chopped

1/4C              Lime juice

1lb                 Small shrimp, peeled, deveined, and tails removed 36-40

2ea                Roma tomatoes, chopped

1ea                Cucumber, peeled, and chopped fine

1 stalk           Celery, chopped fine

1ea                Jalapeno, seeded, and chopped fine              

2t                   Salt

2t                   Ground black pepper

2C                 Clamato

1C                 Catsup

1 bunch         Fresh cilantro stems discarded and leaves chopped

2t                   Hot sauce

           1                    Avocados peeled, pitted, and chopped

           5oz can         Whole clams, drained and rinsed

           Process

           Mix onion and lime juice in a small bowl and  let stand for 10 minutes.

Toss the shrimp, Roma tomatoes, cucumber, celery, jalapeno, clams, salt, and black pepper in a medium bowl until thoroughly combined.

Whisk the clamato, catsup, hot sauce, and cilantro in a separate bowl.

Stir the dressing into the shrimp mixture

Gently fold in the avocados

Stir in the onion mixture

Cover and chill for at least one hour

Serve with Saltine crackers
