
Ingredients
1 9 inch baked pie shell
1/3C Fresh lime juice
1t Grated lime peel
1C Sugar
1/3C Corn starch
1/2t Salt
1/4C Cold water
1-1/4C Hot water
2T Butter
3 Large egg yolks
1t Vanilla extract
1-1/2C Heavy cream, whipped
1T Sugar
Process
Combine 1/2C sugar, all of the corn starch, salt, and cold water in the top of a double boiler
Mix well
Gradually add 1-1/4C of boiling water
Cook 5 minutes over rapidly boiling water or over very low heat, stirring constantly
Cover and cook 8 to 10 minutes over rapidly boiling water, stirring occasionally
Add the butter
Beat the egg yolks and blend with 1/2C sugar
Add a little of the hot mixture
Stir in the rest of the hot mixture
Cook, uncovered over hot but not boiling water for 10 minutes, or until very thick, stirring frequently
Gradually stir in the lime juice and grated peel
Remove from the heat
Cool
Add the vanilla extract
Turn into a cold baked 9 inch pie crust
Top as desired with whipped cream sweetened with 1T of sugar
Garnish with grated lime peel
