Lemon Chicken Cutlets

Ingredients

1/2C   Unseasoned bread crumbs

2t        Rosemary, minced

1-1/2t Lemon zest

2         Skinless boneless chicken breast halves

2T      Olive oil

           Lemon wedges

Directions

Mix bread crumbs, rosemary, and lemon zest on a large plate

Pound the chicken between sheets of Saran Wrap on a cutting board

Heat oil in heavy large skillet over medium-high heat.

Carefully add chicken to skillet.

Sauté until chicken is cooked through and golden brown, turning with tongs, about 4 minutes per side.

Serve chicken with lemon wedges.
