
Ingredients
4C Sifted all-purpose flour
1/4C Granulated sugar
1t Salt
1t Double-acting baking powder
2T Caraway seeds
1/2C Butter
2C Light or dark raisins
1-1/3C Buttermilk
If you don’t have buttermilk use 1-1/3C whole milk and 1t apple cider vinegar
Let sit for 20 minutes and use
1 Unbeaten egg
1t Baking soda
1T Heavy cream
Directions
Preheat oven to 375F
Grease a 2qt casserole
Sift flour, sugar, salt, and baking powder into a mixing bowl
Stir in caraway seeds
Cut in butter with pastry cutter or two knives until pastry is like coarse corn meal
Stir in raisins
Combine buttermilk, egg, and baking soda
Stir into flour mixture till just moistened
Turn dough onto a lightly floured surface and knead lightly until smooth
Shape into a ball
Place in casserole
With a sharp knife make 4” cross ¼” deep in top center
Brush with cream
Bake 70 minutes or until done
Cool in pan for 10 minutes
Remove
Cool before slicing
