Ingredients
318g King Arthur Organic Medium Rye Flour
1-1/4t Salt
2t Baking powder
1/2t Baking soda
303g Buttermilk
112g Honey
113g Molasses
Process
Preheat the oven to 325F with the rack in the center.
In a large bowl, whisk together the flour, salt, baking powder, and baking soda
In a separate bowl, whisk together the buttermilk, honey, and molasses
Pour the wet ingredients into the dry ingredients, stirring to combine
Transfer the batter to a lightly greased Cocktail Loaf Pan and smooth the top
Cut a piece of parchment just large enough to cover the top of the pan
Set a half-sheet pan on top of the loaf pan and parchment
Carefully set a cast iron skillet, or a Dutch oven lid on top of the sheet pan to weigh it down during baking
Bake for 40-45 minutes, until golden brown with an internal temperature of 190F
Carefully remove from the oven and turn out on to a cooling rack
Cool completely before slicing thinly and serving with butter or your favorite savory toppings
