Ingredients
Olive oil spray
1lb Chicken half breasts diced into 1 inch pieces
1ea Egg white beaten
1T Corn starch
1t Salt
1/2ea Head of broccoli cut into small florets
1t Sesame oil
1C Brown rice uncooked
Honey/Sriracha Sauce
2T Honey
2T Sriracha sauce
1t RIce vinegar
1t Sesame oil
2ea Scallions, sliced
1t Black and white sesame seeds
Process
Preheat the oven to 425F
Place the chicken in the egg whites, then corn starch seasoned with 3/4t salt
Spray a large sheet pan with olive oil
Add the chicken pieces on one end, leaving the other end for the broccoli
Bake in the oven for 10 minutes
Remove from the oven and flip the chicken
Add the broccoli to the sheet pan and drizzle with 2t of sesame oil
Season with salt and pepper to taste
Place back into the oven and cook until the chicken is cooked through and the broccoli is tender, about 10 minutes
Meanwhile, in a separate bowl whisk honey, sriracha sauce, rice vinegar, and 1t of sesame oil together until smooth
Add the chicken and toss to coat with sauce
Cook the rice
Divide the cooked rice into 4 bowls
Divide the ingredients, and add into 4 bowls on top of the rice
Top with scallions and sesame seeds
