Grandma Casey’s Chicken and Feather Dumplings

Dumplings

2C      AP Flour                          1t        Salt

4t        Baking powder                   1/4t           Pepper

1egg   Well beaten                        3T           Melted butter

2/3C   Milk

Mix dry ingredients together. 

Add egg, melted butter and enough milk to make a moist, stiff batter.

Drop by tablespoons into boiling liquid.

Makes a dozen dumplings.

Chicken and Dumplings

3-1/2lb          Chicken                                      

   1         Carrot in chunks

1                    Bay leaf                                         

1          Onion in chunks

3stalks          Celery with leaves                  

  2t        Salt

10                 Whole pepper corns                 

  2         Whole cloves of garlic

Place chicken in Dutch oven, cover with water, and add Bay leaf, celery, carrot, onion, salt, pepper, and garlic. 

Bring to boil; simmer 2 hours, or until tender. 

Add more water if necessary. 

Remove chicken and vegetables

Make a gravy from broth. 

Bone chicken and cut into bite size pieces. 

Return chicken and vegetables to the gravy and add dumplings to the mix.

Cover very closely and cook for 18 minutes.
