Glazed Apple Slices

INGREDIENTS

4              Apples (about 1 1/2 pounds) Granny Smith, Pink Ladies, whatever you like

2T            Butter

3T            Grade B maple syrup (or Grade A maple syrup flavored with 1 drop maple extract, or to taste)

1T            Water

1t             Lemon juice

1/4t          Cinnamon

PREPARATION

Peel and core apples

Cut into 1/4-inch-thick slices.

Heat butter in a 12-inch heavy skillet over moderately high heat until foam subsides

Sauté apples, turning them, until golden and tender.

Stir in maple syrup, water, lemon juice, cinnamon, and a pinch of salt and cook, stirring, until apples are glazed.
