
Ingredients
2lbs Small white potatoes
1/2C Diced bacon cooked
1/2C Minced onion
1-1/2t Flour
4t Sugar
1/4t Pepper
Salt
1/4-1/3C Vinegar
1/2C Water
1/4C Minced onion
2T Snipped parsley
1t Celery seeds
1/2C Sliced radishes
Celery leaves
Cook the potatoes in their skins in 1” boiling water in a covered saucepan with 1t salt
Until fork tender about 35minutes
Peel the potatoes and cut into ¼” slices
Fry the bacon until crisp
Add 1/2C of minced onion and sauté until just tender, not brown
Mix the flour, sugar, 1T salt, and pepper.
Stir in vinegar and water until smooth
Add to the bacon
Simmer, stirring until slightly thickened
Pour this hot dressing over the potatoes
Add 1/4C minced onion, parsley, celery seeds, and radishes
Serve lightly tossed and garnished with celery leaves
