Fried Okra

Serves 3

Ingredients

1ea Large egg

8oz Fresh okra

2 dashes Tabasco

1/2C Louisiana Fish Fry seasoned corn meal fish fry

1/3C AP flour

1/2t Cayenne

Vegetable oil for frying

Process


Trim the stems and thin tips from the fresh okra pods. Cut the okra crosswise into 1/2-inch pieces. 

In a medium bowl, lightly beat the eggs with 1/4t salt, Tabasco,

Add the okra and mix well to coat with the egg.

Let soak for 10 minutes.

While the okra sits combine the seasoned fish fry with the flour and cayenne pepper

With a slotted spoon put the okra into a large sealable bag

Seal the bag and shake to combine

In a large cast-iron skillet, heat 1 inch of oil until a deep-fry thermometer registers 375°F. 

Working in batches, add the okra to the bag of cornmeal mix

Seal and shake to coat the okra

Gently squeeze the bag to be sure that the okra is coated with the dry mix

Dump the mixture into a large colander with large bowl underneath to catch the excess coating

Gently shake to remove the excess coating

Transfer the okra to the oil

Cook until golden brown and crisp (2 to 3 minutes)

Remove the okra to a paper towel lined sheet pan

Serve hot
