
Ingredients
1lb Flank steak
3T Soy sauce
Generous Black Pepper
2t Thyme
Process
Score the steak across the grain
Score again in a diamond pattern
Rub the steak with the soy sauce, black pepper, and thyme
Rest for at least 60 minutes
On a hot charcoal fire
Cook 5 minutes on the first side
Flip and cook for 4 minutes on the second side
Steak should be medium rare when cut across the grain
If you need more cook time go back to the grill
Slice at an angle and across the grain
Serve
