
Ingredients
4ea Filet mignon (6oz each)
2T Extra virgin olive oil
Kosher salt
Freshly ground black pepper
2t Sugar
4T Butter
1T Rosemary, roughly chopped
Process
Season the steaks with salt and pepper and refrigerate for 1 hour
Preheat the oven to 400F
Heat the oil in a large skillet over medium high heat
When the oil is just about to smoke add the steaks
Cook until very seared (about 5 minutes)
Flip the steaks
Add butter and rosemary to the pan
Baste with butter and cook for another 3 – 5 minutes.
Check the internal temperature of the meat (medium rare is 135F)
Transfer the skillet to the oven and cook to your preference
Remove from the oven and the pan and let rest for 5 minutes before slicing
