Makes 24 muffins Takes about 30 minutes
Ingredients
1C AP flour
1-1/2t Baking powder
1t Pumpkin pie spice
1/4t Baking soda
1/4t Salt
1ea Egg
1/2C Buttermilk
1/2C Sugar
1/4C Vegetable oil
1/2t Vanilla bean paste
Minced zest of 1 orange
1/2C Minced dried cranberries
Sparkling or granulated sugar
Process
Preheat oven to 400F
Line mini muffin pans with liners
Whisk together flour, baking powder, pumpkin pie spice, baking soda, and salt in a large bowl
Whisk together egg, buttermilk, 1/4C granulated sugar, oil, vanilla, and zest
Stir into the dry ingredients until just combined
Toss the cranberries with the remaining 1/4C of granulated sugar
Stir into the batter
Scoop the batter using a #60 scoop (scant 1T) into the muffin liners
Sprinkle with sparkling sugar
Bake until a toothpick inserted into the centers comes out clean (15 minutes)
