Chopped Salad

Ingredients

Salad

1/2                Medium head iceberg lettuce

3/4C              Ripe large red tomato 1/2in dice

3/4C-             Red onion sliced thin

3oz                Prosciutto di Parma cut crosswise into 1/2in strips

3oz                Hot or sweet sopressata

1-1/2oz         Provolone cut into ¼ x ¼ julienne strips

1/4C              Roasted red peppers cut into 1/2in strips

6                   Cracked Sicilian green olives

6                   Gaeta olives

4                   Whole pepperoncini

Dressing

3T                 Olive oil

1-1/2T           Red wine vinegar

1T                 Fresh basil

1/4t               Salt

1/4t               Dried oregano

1/8t               Black pepper

Salad can be made without dressing several hours in advance covered and stored in the refrigerator until needed.

Combine the olive oil, vinegar, basil, oregano, salt, and black pepper in a small bowl and mix until blended.

Toss the dressing with the salad and chill one to two hours before serving.
